Ingredients

2 teaspoons ghee
1 cinnamon stick
2 bay leaves
1 curry leaf , chopped
1 tablespoon gingerroot ( grated )
2 green chilies , slit
1/2 cup light cream
200 g reduced-fat feta cheese , rinsed ( I prefer the Greek-style )
6 -8 large tomatoes ( peeled , chopped and pureed )
1/2 green bell pepper , chopped
1 teaspoon brown sugar
1 teaspoon salt , use fasting salt for ekadasi ( or more to taste )
fresh thyme , chopped
fresh coriander , chopped
This Indian-styled Feta Cheese - Ekadasi Paneer Makhani is a unique twist on a popular Indian classic. Prepared with reduced-fat Greek-style feta cheese in a rich tomato sauce infused with cinnamon, bay leaves, green bell pepper, and other aromatic ingredients, this vegetarian main course is perfect for any meal. Instructions

1.In a pan, heat the ghee on medium heat. Add cinnamon stick, bay leaves, curry leaf, gingerroot and green chilies. Saute for a minute or two.
2.Add the tomato puree, green bell pepper, brown sugar, and salt to the pan. Cook for around 5 minutes until the mixture starts to thicken.
3.Add the feta cheese to the pan and mix well. Slowly pour in the light cream, stirring gently.
4.Add chopped thyme and coriander to the pan and continue to cook for 5-7 minutes until the cheese becomes soft and pliable.
5.Serve hot with naan, roti, or rice!
