Ingredients

2 cups dried kidney beans , soaked overnight
6 garlic cloves , finely chopped
2 red onions
kosher salt & freshly ground black pepper , to taste
1/2 inch piece ginger , finely chopped
3 serrano chilies , stemmed
1/2 teaspoon ground turmeric
1/2 teaspoon hot paprika
2 tablespoons canola oil
2 dried arbol chiles
2 teaspoons coriander seeds
1/2 teaspoon cumin seed
1 stick cinnamon
1 can whole peeled tomatoes with juice , crushed by hand
1/4 cup cilantro , finely chopped
1 teaspoon garam masala
1 tablespoon fresh lemon juice
hot cooked basmati rice , for serving
Rajma (North Indian Kidney Bean Masala) is a popular and hearty vegetarian dish that originated in North India. Instructions

1.In a pressure cooker or large pot, add soaked kidney beans, water and salt and cook until beans are tender.
2.In a skillet, heat oil and add dried arbol chilies, coriander seeds and cumin seeds and cook until fragrant. Add onions and cook until golden brown.
3.Add ginger, garlic and serrano chilies and cook for 1-2 minutes.
4.Add ground turmeric, hot paprika and cinnamon stick to the skillet and mix well.
5.Add crushed tomatoes, salt and black pepper and cook until the tomatoes are fully cooked and oil separates from the masala.
6.Add cooked kidney beans, garam masala, cilantro and lemon juice and simmer for a few minutes until the masala is fully coated on the beans.
7.Serve hot with basmati rice.
