Chicken chilaquiles is a classic dish in Mexican cuisine, often served as a breakfast or brunch item. It consists of tortilla chips or strips, cooked in a salsa or tomato-based sauce until soft and slightly crispy. Various meats or eggs can be added to the dish, as well as cheese, sour cream or avocado. In this recipe from Campbell's Kitchen, the focus is on shredded chicken, combined with onions, garlic, and oregano in a light tomato sauce. The tortilla strips are baked instead of fried, which adds crunch and texture without extra oil. This recipe serves 4 people and can be easily doubled or halved.

Instructions

1.Preheat oven to 425°F (220°C).
2.Spread tortilla strips in a single layer on a baking sheet coated with cooking spray. Drizzle with oil and toss to coat.
3.Bake tortilla strips for 10 minutes or until crisp and lightly browned.
4.Meanwhile, in a large skillet coated with cooking spray, cook onion over medium heat for 3-4 minutes or until tender, stirring occasionally.
5.Add oregano and garlic and cook for 1 minute longer.
6.Add water, chicken and pepper and bring to a boil. Reduce heat and let it simmer for 5 minutes or until heated through.
7.Add crisp tortilla strips to the chicken mixture and stir to coat. Sprinkle with cheese and cilantro and bake in preheated oven for 5 minutes or until cheese is melted.
8.Serve with lime wedges.

PROS

This dish is easy to make and perfect for a weeknight meal or a weekend brunch.
It is packed with flavor and textures, from the crunchy tortilla strips to the tender chicken and melty cheese.

It is a great way to use leftover chicken and can be customized with additional veggies or toppings, such as avocado, jalapenos or sour cream.

CONS

Chilaquiles are not the healthiest dish out there, as they are usually fried and loaded with cheese and toppings.

However, this version is a bit lighter as it bakes the tortilla strips and uses shredded chicken instead of beef and pork.

It can also be paired with a side salad or veggies to balance out the meal.

HEALTH & BENEFITS

Chicken chilaquiles can provide a good source of protein, fiber, and healthy fats when made with lean chicken, whole-grain tortillas, and veggies.
The dish contains essential nutrients such as vitamin C, calcium, and iron, especially if topped with fresh cilantro and lime juice.
However, it is important to watch the portions and sodium content as the dish can be high in calories and salt.
