Ingredients

1 small sugar pumpkin
2 1/2 cups whole milk
2 teaspoons rice flour
1 tablespoon water
1/2 - 3/4 cup sugar
6 -8 whole green cardamom pods
12 raw cashews , chopped coarsely
1/4 teaspoon nutmeg , finely grated

Instructions

1.Cut the stem and bottom off the pumpkin.
2.Cut it halfway and deseed it.
3.Chop the pumpkin into small pieces.
4.Cook the chopped pumpkin pieces in a pan with 1 cup of water until they become soft.
5.Use a blender to blend the cooked pumpkin into a puree.
6.In a saucepan, add 2 1/2 cups of whole milk and bring it to boil.
7.Mix 2 teaspoons of rice flour and 1 tablespoon of water together in a separate bowl.
8.When the milk starts to boil, add the rice flour mixture to the saucepan and stir it well.
9.Add the cooked pumpkin puree to the saucepan and mix it well.
10.Add 1/2 to 3/4 cup of sugar and mix it well.
11.Crush the whole green cardamom pods and add them to the saucepan.
12.Add 12 chopped raw cashews to the saucepan and mix it well.
13.Add 1/4 teaspoon of finely grated nutmeg to the saucepan and mix it well.
14.Let the kheer simmer on medium heat for about 15-20 minutes or until the desired consistency is achieved.
