Ingredients

2 skinless , boneless chicken breast halves
2 tablespoons minced garlic
1 medium onion , chopped
3 cups water
1 tablespoon chicken bouillon granules
4 fresh poblano chilies
1 container sour cream
2 tablespoons olive oil
10 corn tortillas
1 cup shredded mozzarella cheese

Instructions

9.In a 9x13 inch baking dish, spoon a layer of the poblano and sour cream sauce to cover the bottom.
10.Dip the tortillas one by one into the poblano and sour cream sauce, spreading each one with shredded chicken, just enough to fill the center.
11.Roll the tortillas and place them seam-side down in a baking dish.
12.Cover the enchiladas with the remaining sauce and sprinkle shredded mozzarella cheese on top. Bake for 25 minutes or until cheese is melted and bubbly.
