Ingredients

2 cups millet ( jhangora )
3/4 cup sugar
2 quarts milk
1/2 tablespoon cashew nuts
1/2 tablespoon raisins
1/4 cup almonds
2 tablespoons kewra essence or 2 tablespoons rose water , to taste
Jhangora Ki Kheer (Jhangora Pudding) is a traditional Indian dessert made with millet, milk, sugar, nuts, and flavored with kewra essence or rose water. Jhangora is also known as barnyard millet in English and is commonly found in many Indian cuisines. It is a gluten-free grain and has a pleasantly sweet flavor. Instructions

1.Rinse the millet and drain the water. Then, grind them into a coarse powder using a food processor.
2.Add the powdered millet and milk into a saucepan and bring to a boil.
3.Turn down the heat to low-medium, add sugar, and stir in until dissolved. Simmer the mixture with continuous stirring for around 20 minutes until it thickens.
4.Add cashews, raisins, almonds, and kewra essence/rose water and stir to combine. Cook for another 10-15 minutes on low heat until the desired pudding consistency is achieved.
5.Garnish with some chopped nuts, rose petals, and serve hot or chilled as desired.
