Ingredients

2 cups fresh pineapple , cut into 1/2-inch cubes
2 tablespoons sugar
1/2 cup water
3 tablespoons finely grated coconut ( use the frozen kind or use desiccated coconut )
1 cup plain yogurt
1 1/4 - 1 1/2 teaspoons salt
1 fresh hot green chili pepper , finely chopped ( such as bird 's eye )
1 tablespoon olive oil or 1 tablespoon canola oil
1/2 teaspoon whole brown mustard seeds
1/4 teaspoon whole cumin seed
2 hot dried red chilies
10 fresh curry leaves or 6 fresh basil leaves
2 tablespoons finely sliced shallots or 2 tablespoons onions , cut into fine half rings
Yogurt-Pineapple Raita is a classic Indian side dish made from fresh pineapple and plain yogurt, with toasted spices and herbs. Instructions

1.In a small saucepan, combine sugar and water, and bring to a boil over high heat.
2.Reduce heat and simmer until syrupy, about 5 minutes.
3.Add the pineapple cubes and cook, stirring occasionally until lightly caramelized, about 8 minutes.
4.Remove from heat and let cool.
5.In a large bowl, mix plain yogurt with grated coconut and salt.
6.Add chopped green chili pepper and the cooled pineapple mixture.
7.Heat oil in a small pan and add mustard and cumin seeds. When seeds start to pop, add dried red chilies and curry or basil leaves.
8.Remove from heat and stir in sliced shallots or onions.
9.Add seasoned oil mixture to the yogurt and gently mix everything together. Refrigerate for at least 30 minutes before serving.
