Ingredients

2 tablespoons vegetable oil
1 lb small potato
1 small onion , sliced
15 -20 curry leaves
1 bunch of fresh mint , chopped
1 bunch fresh coriander , chopped
1 teaspoon turmeric
5 small green chilies
5 dried red chilies
1 teaspoon mustard seeds
1 teaspoon Urad Dal
1 teaspoon cumin seed
1 tablespoon vegetable oil
1/2 teaspoon channa dal
1/2 teaspoon Urad Dal
1 dried whole red chili
1/2 teaspoon cumin seed
1/2 teaspoon white sesame seeds
1/2 teaspoon dried unsweetened coconut
1 teaspoon peanuts
Bangaladumpa Vepudu Aka Fried Minted Potatoes is a popular dish from the South Indian cuisine, particularly from Andhra Pradesh. Instructions

1.Heat 2 tablespoons of vegetable oil in a pan.
2.Add the sliced onions and green chilies, sauté for a few minutes until they turn translucent.
3.Toss in the curry leaves, dried red chilies, and mustard seeds, sauté until the seeds start to pop.
4.Add the potato pieces, turmeric, and salt. Cook covered for 10-12 minutes on medium heat, stirring occasionally.
5.In a separate pan, heat 1 tablespoon of oil and add the Urad Dal, channa dal, dried red chili, cumin seeds, and white sesame seeds. Sauté until they turn golden brown.
6.Add the chopped mint leaves, coriander leaves, and dried coconut. Sauté for 3-4 minutes on low heat.
7.Mix the roasted spices and mint leaves with the potato mixture.
8.Serve hot with rice or roti.
