1 teaspoon turmeric
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon salt
1/2 teaspoon cayenne garlic paste ( see below )
1 medium tomatoes , chopped fairly fine
1 tablespoon cilantro ( optional )

Instructions

1.Heat the oil in a large heavy skillet over medium high heat.
2.When hot, add mustard seeds and when they start to pop and sizzle, add potato cubes and eggplant cubes. Mix them well.
3.Move the mixture around and let it cook for 10 minutes until the vegetables are browned nicely.
4.Add turmeric, cumin, coriander, salt, and garlic paste. Mix them well.
5.Add the chopped tomatoes and mix well. Continue to cook until the vegetables are tender, and the oil has separated from it.
6.Sprinkle cilantro on the top.
