Ingredients

3/4 inch piece gingerroot
2 teaspoons oil

3 -5 saffron strands ( kesar )

1 tablespoon lemon juice
1 1/2 teaspoons chat masala
2 tablespoons gram flour ( besan )
1/2 teaspoon turmeric powder
1 teaspoon white pepper powder
salt
1 tablespoon lemon juice
1/2 teaspoon fennel ( Lucknowi saunf powder )
500 g cottage cheese ( paneer )
1 cup fresh cream
5 garlic cloves
2 medium red capsicums

Instructions

1.In a large mixing bowl, combine gingerroot, oil, cardamom powder, saffron strands, and chat masala.
2.Add gram flour, turmeric powder, white pepper powder, salt, lemon juice, and fennel seed powder to the bowl. Mix well.
3.Add cubed cottage cheese to the mixture, and toss until the cheese is coated with the marinade.
4.Cut the red capsicums into 1-inch pieces and add to the bowl with cheese. Mix everything together until capsicum pieces are coated evenly with the marinade.
5.Thread the cheese and capsicum pieces alternately onto skewers.
6.Preheat the grill to medium-high heat and grill the skewers for 10-15 minutes, or until the cheese is browned on all sides. Flip the skewers every 2-3 minutes to cook evenly.
7.Brush the skewers with butter while grilling to keep them moist.
8.Serve hot with fresh cream and lemon wedges on the side.
