10 ounces tamarind pods , peeled ( about 29 )
10 cups water
1/2 - 1 cup sugar
Agua de Tamarindo is a popular beverage in Mexico, Central, and South America. It is made from tamarind, a fruit with a sweet and sour flavor that is often used in traditional cooking. Instructions

1.Add the tamarind pods and 4 cups of water to a large pot over medium heat.
2.Bring the mixture to a boil and then reduce the heat to low. Let it simmer for 20-25 minutes, stirring occasionally.
3.Remove the pot from heat and strain the mixture through a mesh strainer into a large bowl. Use the back of a spoon to press the tamarind pulp through the strainer.
4.Discard the pulp and seeds and pour the tamarind juice back into the pot.
5.Add the remaining 6 cups of water and sugar to the pot and stir until the sugar dissolves.
6.Taste the mixture and add more sugar if necessary.
7.Refrigerate for at least 2 hours before serving over ice.
