1/2 teaspoon of finely chopped celery

Instructions

1.Melt butter in a saucepan over medium heat.
2.Add chopped garlic and onion, saute for 2-3 minutes until onion gets soft and translucent.
3.Add chopped celery and saute for one more minute.
4.Now add the diced tomatoes, salt and black pepper. Mix well.
5.Cover with lid and let it simmer for about 15-20 minutes, stirring occasionally
6.Once the tomatoes get soft, blend the mixture into a smooth puree
7.Add chopped mint leaves and stir for about 2 minutes
8.Serve hot with croutons or breadsticks of your choice
