2 cups rice
2 medium onions
1 medium tomatoes
1 medium capsicum
1 medium carrot
2 medium potatoes
10 green beans
6 cauliflower florets
1/4 cup green peas
1/4 cup cilantro , chopped
1/4 cup mint , chopped
4 green chilies
10 -12 curry leaves
10 tablespoons peanut oil
salt
1 tablespoon lemon juice
10 -12 garlic cloves
1 tablespoon grated gingerroot
1/4 cup grated coconut
4 red chilies
2 tablespoons coriander seeds
1 teaspoon cumin seed
1 tablespoon poppy seed
2 tablespoons fennel seeds
1/2 inch cinnamon stick
2 cloves
2 green cardamoms
2 mace blades
1 star anise
10 -12 peppercorns
1 dash ground nutmeg
Kaikari Biryani is a famous vegetarian dish originating from Southern India. Instructions

1.Rinse the rice thoroughly and soak in cold water for 30 minutes.
2.Cut the onions, tomatoes, capsicum, carrot, potatoes, and green beans in small pieces.
3.Heat 3 tablespoons of peanut oil in a large pan and sauté the onions until soft.
4.Add garlic and ginger and fry for 1-2 minutes.
5.Add the red chilies, coriander seeds, cumin seeds, poppy seeds, fennel seeds, cinnamon, cloves, green cardamoms, mace blades, star anise, and peppercorns, and fry for another 1-2 minutes.
6.Add the tomatoes and stir well until they soften.
7.Add the vegetables and stir-fry for 2-3 minutes.
8.Add the cilantro, mint, green chilies, and curry leaves, and stir well.
9.Add enough water to cook the rice, and add salt and lemon juice according to your taste.
10.Finally, strain the soaked rice and add it to the pan, mix well, and cover it with a lid.
11.Cook on high heat until the water comes to a boil, then reduce the heat to low and cook for 18-20 minutes or until the rice is cooked.
12.Once ready, remove the lid, fluff the rice with a fork, and serve hot.
