Ingredients

1/3 cup shelled pistachios , toasted
1/3 cup desiccated coconut , toasted
2 liters vanilla ice cream ( softened in the fridge for 1 hour )
1/2 cup coconut cream

Try this super quick coconut and pistachio ice-cream, and you don't need a fancy maker, this recipe is so easy and quick that you can whip up delicious homemade ice-cream any day of the week! The best part of this recipe is how the mixture is packed with tropical coconut and nutty pistachio flavors, once it’s topped with toasted nuts for a satisfying crunch. Plus, the combination of nuts and coconut cream adds an extra dimension to your dish.

Instructions

1.Preheat your oven to 150°C.
2.Spread the pistachios and coconut separately onto two baking trays covered with baking paper, and toast them in the oven for 5 minutes.
3.In a large mixing bowl combine the softened vanilla ice cream with the toasted pistachios and coconut until it's fully mixed in.
4.In a saucepan over low heat, heat the coconut cream until it’s melted, and then add it to the ice cream mixture, stirring until it's fully combined.
5.Pour the mixture into a metal cake pan and freeze the ice-cream for 6 hours, or until firm. Cut and enjoy!
