Ingredients

2 eggplants , cubed
5 tablespoons vegetable oil , divided
1 large onion , chopped
3 large garlic cloves , minced
2 tablespoons fresh ginger , minced
1 tablespoon garam masala
2 teaspoons ground cumin
1/2 teaspoon cayenne pepper ( to taste )
1 can petite diced tomatoes
1/2 cup water
1/3 cup fresh cilantro , chopped
salt , to taste

Instructions

1.Heat 3 tablespoons of oil in a large pot or Dutch oven over medium-high heat. Once hot, add the cubed eggplant and cook for about 10 minutes, stirring occasionally, until browned and softened.
2.Remove the eggplant and set it aside in a plate.
3.In the same pot, heat the remaining 2 tablespoons of oil over medium heat. Once hot, add the chopped onion, minced garlic, and minced ginger. Sauté until the onions are translucent and the garlic and ginger are fragrant, about 5 minutes.
4.Add the garam masala, ground cumin, and cayenne pepper, stirring well to combine. Cook for an additional 2-3 minutes, until the spices are fragrant.
5.Add the petite diced tomatoes and water to the pot, stirring well to combine. Bring the mixture to a boil, then reduce the heat to medium-low and simmer for about 10-15 minutes, until slightly thickened.
6.Return the eggplant to the pot and stir well. Simmer for another 5-10 minutes, until the eggplant has completely softened and the mixture is thick and spreadable.
7.Stir in the chopped cilantro and salt to taste.
8.Remove from heat and allow to cool to room temperature before serving. Store any leftovers in an airtight container in the fridge for up to 5 days.
