Ingredients

1 cup long grain rice
1 liter fresh milk
1 cup sugar
1 1/2 tablespoons ghee
4 green cardamoms
8 cashews , chopped
8 almonds , chopped
1 1/2 tablespoons chironji
Kheer is a traditional Indian dessert, that is a popular dish served and enjoyed during festivals and celebrations, such as weddings. Instructions

1.Wash and soak the rice in water for 20-25 min.
2.In a large pan, add the milk and bring it to boil over medium heat.
3.Drain the water from the rice and add it to the boiling milk.
4.Lower the heat and cook for 20-25 min, stirring occasionally until the rice is soft and the milk has reduced.
5.Add sugar and mix well.
6.In a separate pan, heat the ghee and add the chopped cashews, almonds and chironji. Saute for a few minutes.
7.Add these to the kheer, along with the crushed cardamoms.
8.Cook for another 5-7 min until the kheer thickens.
9.Turn off the heat and let it cool down for a while.
10.Serve chilled or warm, as per preference.
