Ingredients

1 ridge gourd
100 g tomatoes , Chopped
2 onions , Chopped
50 g mung dal ( optional )
1 teaspoon turmeric powder
2 teaspoons chili powder
1 teaspoon garam masala ( optional )
1 teaspoon mustard seeds
1 teaspoon jeera powder
1 teaspoon fennel seed
curry leaf
coriander leaves
salt

Instructions

1.Begin by peeling the ridge gourd and chopping it into small pieces. Rinse well with water.
2.In a pan, heat oil and add the mustard seeds, fennel seeds and curry leaves. Wait till the mustard seeds pop.
3.Now add the chopped onions and sauté until translucent. Add the chopped tomatoes and sauté until the tomatoes are soft and well combined.
4.Now add the chopped ridge gourd, salt, turmeric, chilli powder, and garam masala. Mix well.
5.Cover and cook on medium-low heat for around 20-25 minutes, stirring occasionally.
6.Once the ridge gourd is cooked well, add the mung dal (if using) and stir well. Cook for another 5-7 minutes. Turn off the heat.
7.Garnish with fresh coriander leaves and serve hot with roti or rice.
