Ingredients

1 cup red lentil ( masoor dal )
1 tablespoon vegetable oil
1 small red onion , chopped small
2 garlic cloves , minced
1 tablespoon ginger , minced
3/4 teaspoon salt
1/2 teaspoon mustard seeds
1/2 teaspoon turmeric
1/2 teaspoon cumin seed
1/2 teaspoon coriander powder
1 medium tomatoes , diced
1/2 tablespoon butter ( or ghee )
2 tablespoons cilantro , chopped , for garnish ( can also use green onion or a combination of both )
water , to make soup
1/2 cup basmati rice
Dal Bhat is a popular dish in Nepal, and typically served as a staple food in local households. The dish is also popular among trekkers and climbers in the Himalayas, who often enjoy it as part of their meals in teahouses. It can be eaten anytime of the day and is usually accompanied by vegetable or meat curry, pickles, yogurt and papadum (thin and crispy flatbread). The dish is simple and satisfying, and also a tasty and affordable way to experience Nepalese cuisine.

Instructions

1.Rinse the red lentils and soak them in water for at least 30 minutes.
2.In a pot, heat the vegetable oil and add mustard seeds. Once the seeds start to pop, add chopped onion and cook until translucent.
3.Add minced garlic and ginger and cook for a minute.
4.Add turmeric, cumin seed, coriander powder, diced tomato and stir for 2-3 minutes.
5.Drain the red lentils and add them to the pot with 3 cups of water and salt. Cook on medium-high heat for 20-25 minutes or until the lentils are soft and fully cooked.
6.Cook basmati rice according to package instructions, then serve it with the dal (curry).
7.Top it with butter or ghee and chopped cilantro or green onion.

PROS

Dal Bhat is a complete meal and a good source of plant-based protein and fiber.
Red lentils are rich in folate, iron and manganese.

The dish is flavorful and easy to make for a large crowd.

CONS

This dish is high in carbohydrates and may not be suitable for some diets.

It can be too spicy for some people, but the heat can be adjusted easily.
