Cauliflower Panko Pakoras are a twist on the traditional Indian snack, pakoras. These pakoras are made with a light and crispy panko breadcrumb coating instead of the traditional chickpea flour coating. The cauliflower is lightly spiced with a blend of garam masala, cumin, turmeric, and cayenne, which gives them a flavorful kick. These pakoras are perfect as an appetizer or snack, and can be served with your favorite dipping sauce.

Instructions

1.Preheat the oven to 400°F.
2.Line a large baking sheet with parchment paper and brush lightly with vegetable oil.

4.Add the lemon juice, club soda, and egg whites, whisking until smooth.
5.Dip each cauliflower floret into the batter, shaking off any excess, and then toss in the remaining 1 cup of panko breadcrumbs to coat.
6.Place the breaded cauliflower florets onto the prepared baking sheet and lightly drizzle with vegetable oil.
7.Bake for 15 minutes, then carefully flip each piece of cauliflower and bake for an additional 10-15 minutes, or until golden brown and crispy.
