Ingredients

1/2 cup toor dal
1/2 cup Urad Dal
1/4 cup channa dal
1/4 cup mung dal
1/2 cup parboiled rice ( uncooked , white or brown will do )
2 serrano chilies , chopped coarsely
1 inch ginger , peeled and chopped coarsely
1/4 cup cilantro , trimmed and washed
asafoetida powder , a pinch
salt
This South Indian delicacy is often served for breakfast, and sometimes for dinner. It is made of four different kinds of lentils, including toor dal, urad dal, channa dal, and mung dal, along with rice, chilies, ginger, and cilantro. It is typically served with coconut chutney or sambar. The batter is fermented for better texture and flavor. The lentils add a distinct nutty flavor and texture, making it a healthy and appetizing food choice. It's easy to prepare, versatile and can be customized to your preferences.

Instructions

1.Rinse all the dals and rice together a couple of times. Soak them in warm water for up to 4 hours. Then grind along with ginger, chilies, cilantro and asafoetida powder, adding water as needed.
2.Once ground to a fine consistency, add salt, mix well and let the batter rest for 30 minutes.
3.Heat up a cast-iron or non-stick skillet on medium-high heat.
4.Pour a laddle full of batter onto the skillet, amount depends on how big the skillet is.
5.Spread evenly in a circular motion and let it cook for about a minute or until the edges start to lift off the skillet.
6.Flip using a spatula and let cook for another minute, or until the crepe is cooked through. You will know this by a stable texture and no longer runny batter.
7.Serve hot with your favorite chutney and sambar.
