Ingredients

2 tablespoons whole brown mustard seeds ( or a combination of brown and yellow mustard seeds ) or 2 tablespoons yellow mustard seeds ( or a combination of brown and yellow mustard seeds )
3/4 cup water
3 3 tablespoons olive oil or 3 tablespoons vegetable oil
1 medium onion , quartered lengthwise and thinly sliced
3/4 lb green beans , cut into 1-inch-long pieces
1 1/4 teaspoons salt
1/2 cup chopped fresh cilantro
1 fresh hot green chili pepper , cut into long slivers ( DO NOT remove the seeds )

Instructions

1.In a small bowl, mix the mustard seeds with water and let sit for 5 minutes.
2.In a large skillet, heat oil over medium heat. Add onions and stir occasionally until lightly browned for 6 to 7 minutes.
3.Add green beans and sprinkle with salt, stir well.
4.Add mustard seeds mixture and chili pepper, stir well.
5.Cover the skillet with a lid and cook over low heat for 8 to 10 minutes until the beans are tender but not mushy.
6.Check seasoning and decorate with fresh cilantro. Serve warm.
