Ingredients

1/2 cup semolina ( suji )
1/2 cup whole wheat flour
2 cups unbleached all-purpose flour
1/2 cup oil , plus more for deep frying
1 teaspoon salt , to taste
1/4 teaspoon caraway seed , to taste
2 teaspoons coarsely crushed black pepper , to taste

Instructions

1.In a mixing bowl, add semolina, whole wheat flour, all-purpose flour, oil, salt, caraway seeds and coarsely crushed black pepper.
2.Mix all the ingredients well and knead the dough by gradually adding water.
3.The dough should not be too soft or too hard, it should be firm.
4.Cover the dough with a cloth and keep aside for 10 minutes.
5.After 10 minutes, divide the dough into small portions of medium size.
6.Roll each portion into a small disc shape using a rolling pin.
7.Prick the rolled disc with a fork to avoid puffing while frying.
8.Repeat the process with all the dough portions.
9.Heat oil in a deep fry pan and once the oil is hot, gently slide the rolled out dough portions into the oil.
10.Deep-fry both the sides until it turns golden brown.
11.Once it is done, take it out with a slotted spoon and place it on a kitchen towel to remove excess oil.
