Ingredients

3 eggs
2 tablespoons vegetable oil
2 teaspoons cumin
1/2 tablespoon sugar ( for red colour )
2 sliced onions
1 chopped garlic
2 -3 dry chili peppers
2 teaspoons cumin powder
2 teaspoons coriander powder
2 teaspoons turmeric powder
1 teaspoon ginger paste
1 tablespoon garlic paste
1 cup water
My Dad's Indian Egg Curry is a classic, spicy Indian dish that is perfect for dinner. It's a creamy, tomato-based sauce with boiled eggs that are cooked in the sauce to absorb all the flavors. Instructions

1.Boil the eggs for 6-8 minutes, then drain and set aside.
2.Heat the oil in a pan over medium heat.
3.Add the cumin seeds and fry gently for 1 minute until fragrant.
4.Add the sliced onions and fry until they become translucent.
5.Add the chopped garlic, dry chili peppers and fry for a minute.
6.Add cumin powder, coriander powder, and turmeric powder. Fry the mixture for 1 minute.
7.Add ginger paste and garlic paste, and fry for 2-3 minutes.
8.Pour in the cup of water and add half tablespoon sugar for red color. Mix well.
9.Once the mixture starts boiling, reduce the heat and let it simmer for 5 minutes.
10.Cut the boiled eggs into halves and add them in the pan. Coat them with curry sauce well. Let it cook for another 5-7 minutes.
11.Serve hot with rice or naan bread.
