2 tablespoons finely chopped unsalted whole natural almonds
2 tablespoons sesame seeds
1 tablespoon olive oil
1 medium onion , chopped
2 cloves garlic , minced
1 can diced tomatoes , drained
2 canned chipotle peppers in adobo sauce
1/4 cup raisins
1/4 teaspoon kosher salt
1/8 teaspoon ground black pepper
1 dash ground cinnamon
2 cups shredded cooked chicken
3/4 cup Mexican blend cheese
8 corn tortillas , warmed
1/4 cup sour cream

Instructions

1.In a dry skillet over medium-high heat, toast the almonds and sesame seeds until golden brown, stirring frequently to prevent burning. Remove from heat and set aside.
2.Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic and cook until onion is soft and translucent, about 5 minutes.
3.Add drained diced tomatoes, canned chipotle peppers in adobo sauce, raisins, kosher salt, black pepper and cinnamon. Mix well and cook for 5 minutes, stirring occasionally.
4.Remove from heat and use an immersion blender or transfer to a blender to puree the mixture until smooth. If using a blender, be sure to vent the lid or allow the mixture to cool slightly before blending.
5.Preheat oven to 375°F.
6.In a large bowl, mix shredded cooked chicken, Mexican blend cheese, and the toasted almonds and sesame seeds. Add 1 cup of the red mole sauce and mix well.
7.Place a scoop of chicken mixture onto each warmed corn tortilla, roll up and place seam-side down in a 13x9 inch baking dish. Pour remaining red mole sauce over the top of the enchiladas and sprinkle with additional cheese.
8.Bake in the preheated oven for 20-25 minutes or until enchiladas are heated through and cheese is melted.
9.Serve hot, topped with sour cream.
