Ingredients

1 kg boneless chicken
1 tablespoon ginger-garlic paste
50 g cashew nuts
50 g processed cheese ( Grated )
2 lemons , Lemon Juice
1 teaspoon turmeric powder
3 chilies , Green Chillies
1 teaspoon coriander powder
1/2 teaspoon cumin powder
2 tablespoons Greek yogurt
1 tablespoon coriander leaves ( Chopped )
1/2 teaspoon cardamom powder
3 tablespoons oil or 3 tablespoons clarified butter

Chicken Zareen Tikka Kabab is a popular North Indian delicacy that is perfect as a snack or main course. The chicken is marinated in yogurt and spices which help tenderize the meat and impart amazing flavors. The cashews and cheese added to the marination make the chicken juicy, flavorful and a bit creamy. Traditionally cooked in a clay oven called a tandoor, in this recipe, the chicken is baked in the oven which makes it an effortless recipe. The chicken kababs can be served with mint chutney, lemon wedges, sliced red onions, or as a side dish to any meal. This dish is sure to impress anyone who loves spicy food.

Instructions

1.In a large bowl, combine the boneless chicken, ginger-garlic paste, cashew nuts, processed cheese, lemon juice, turmeric powder, coriander powder, cumin powder, Greek yogurt, coriander leaves, cardamom powder, oil or clarified butter and salt. Mix until chicken is well coated.
2.Cover the bowl with cling film and keep it in the fridge for at least 1 hour to marinate.
3.Preheat your oven to 200°C and skewer the chicken on to the barbecue sticks. Line a baking tray with parchment paper and place the skewered chicken on it.
4.Bake the chicken for around 20 to 30 minutes, or until the chicken is cooked through and is golden brown. Turn the chicken over halfway through the cooking time to ensure it’s cooked evenly.
