Ingredients

4 large onions , coarsely chopped
150 ml vegetable oil
6 large garlic cloves , minced
1 three-inch chunk ginger , grated
1 tablespoon ground coriander
2 tablespoons hot paprika
2 teaspoons ground turmeric
480 g chopped tomatoes
water

2 tablespoons sugar
6 golf-ball sized tomatoes , quartered
4 chicken breasts , diced
1 chicken stock cube
200 ml water

Instructions

1.Heat 150 ml of vegetable oil in a large pot over medium-high heat.

3.Add the ground coriander, hot paprika, and ground turmeric to the pot, and stir for a minute.
4.Add the chopped tomatoes, and enough water to cover everything in the pot. Add 2 teaspoons of salt.
5.Bring everything to a boil, then reduce the heat to a simmer, and let it cook for 30 minutes.
6.In a separate pan, heat 4 tablespoons of vegetable oil over medium-high heat. Add the finely chopped onion, minced garlic, and grated ginger to the pan, and sauté for a few minutes.
7.Add the cumin, ground coriander, cinnamon, salt, and chopped red chili pepper to the pan, and sauté for a minute or two.
8.Add the coarsely chopped fresh coriander, white wine vinegar, and sugar to the pan, and stir everything together.
9.Add the quartered golf-ball sized tomatoes to the pan, and sauté for a couple of minutes.
10.Add the diced chicken breast to the pan, and fry until the chicken turns golden brown.
11.Add the chicken and sauce from the separate pan to the large pot containing the tomato and onion mixture.
12.Add the chicken stock cube and 200 ml of water to the pot.
13.Stir the contents of the pot together well, and bring everything to a boil.
14.Once boiling, reduce the heat to a simmer, and let it cook for 20-25 minutes.
15.Serve hot with rice or naan bread.
