1 1/2 teaspoons ground coriander
3/4 teaspoon ground cumin

1/2 cup chopped seeded cucumber
1 tablespoon diced pimento , drained

Instructions

6.Let the chicken rest for 10 minutes before carving. Serve it with the chopped cucumber, pimento, lemon wedge, onion wedges, and optionally, fresh cilantro.
