1 1/2 lbs fresh yams ( or one 15-oz can yams , rinsed and drained )
1/2 cup besan ( also called gram , chickpea flour )
1 teaspoon garam masala
1/2 teaspoon curry powder
1/2 teaspoon sea salt
1/4 cup olive oil , for frying
