2 medium potatoes , cut into 1/2 inch cubes
1 medium eggplant , cut into 1/2 inch cubes

1 green chili pepper , chopped

1/2 teaspoon paprika
2 tablespoons water
1 tablespoon cooking oil
1 teaspoon cumin seed
4 medium tomatoes , chopped
1 teaspoon salt
2 tablespoons cilantro , chopped

Instructions

1.Heat the oil in a deep frying pan or wok and fry the potatoes and eggplant separately until slightly golden. Drain onto a kitchen paper and keep aside.
2.In the same pan, add ginger, green chili, coriander powder, turmeric powder, and paprika. Saute for 30 seconds and add 2 tablespoons of water.
3.Add cumin seeds and saute for another 30 seconds.
4.Next, add the tomatoes and cook until the tomatoes are soft and mushy.
5.Mash the tomatoes with a masher or the back of a heavy-duty spoon until they form a thick paste.
6.Add salt, cilantro, and the fried eggplant and potatoes. Mix well and cook for 5 minutes.
7.Serve hot with steamed rice or any Indian bread like chapati, naan, or paratha.
