Ingredients

2 cups wheat flour , add to this
salt
1/2 teaspoon chili powder
1/2 teaspoon jeera powder ( cuminseed )
2 tablespoons oil
water , from the grated radish , for kneading the dough ( will be explained below )
1 medium diakon radish , grated ( after grating squeeze out the water/juice , use it for kneading dough )
1/2 ajwain ( available from indian stores ) ( optional )
1/4 turmeric powder
1/2 teaspoon jeera powder
1/2 onion , grated , juice squeezed out discard this
salt
1/4 chili powder
2 tablespoons cilantro leaves , finely chopped
oil ( for frying )

Instructions

1.In a large mixing bowl, take wheat flour and add salt, chili powder, jeera powder, and oil.
2.Mix the ingredients well and then add the grated diakon radish, ajwain (if using), turmeric powder, jeera powder, chili powder, grated onion, cilantro leaves, and some of the squeezed out water/juice.
3.Knead the dough by adding water from the grated radish as required. The dough should be of medium soft consistency.
4.Cover the dough with a wet cloth and let it rest for about 20 minutes.
5.After 20 minutes, take a lemon-sized ball of dough and roll it out into a small circular disc. Put a tablespoon of oil in the center of the disc and spread it around.
6.Fold the disc in half and then fold it into a triangle.
7.Roll out the paratha, keeping the stuffed side on top, to a medium thickness.
8.Heat a tawa (flat griddle) on medium heat and place the stuffed paratha on the tawa. Cook for 30 seconds, then flip and cook the other side for another 30 seconds.
9.Apply oil on both sides and cook until crisp and brown spots appear on each side.
