Ingredients

500 g mutton , thigh portion curry cut pieces
4 large potatoes
150 g onions
1 inch piece gingerroot
6 -8 garlic cloves
2 teaspoons chili powder
1 teaspoon turmeric powder
3 -4 green cardamom pods
1 small cinnamon stick
2 bay leaves
1 -2 teaspoon salt
1 teaspoon sugar
5 tablespoons mustard oil , if available or 5 tablespoons vegetable oil
2 tablespoons ghee
1 -2 cup water
Mutton-Lamb Stew made like Bengali's is a classic Bengali dish, often prepared during special occasions and weddings. The use of mustard oil, ghee and classic Indian spices gives this stew its unique flavor. This stew is hearty and filling, making it perfect for cold winter nights. The tender meat, potatoes and rich gravy make this dish a comfort food. It can be served with rice or bread.

Instructions

1.Wash mutton pieces under running water and keep aside.
2.Thinly slice onions and keep aside.
3.Grate ginger and garlic and keep aside.
4.Peel potatoes and cut them into halves.
5.Heat the oil in a pressure cooker.
6.Once the oil is hot, add the cardamom, cinnamon stick and bay leaves.
7.Once the spices start to crackle, add onions and sauté until they become translucent.
8.Add ginger-garlic and sauté for another minute or until the raw smell goes away.
9.Add the mutton and mix well. Saute the mutton for 8-10 minutes or until the color of the meat changes.
10.Add the salt, sugar and all the spices. Mix well.
11.Add the potatoes and mix it well with the mutton.
12.Pour in the water and give a final mix.
13.Close the pressure cooker lid and cook for 12-15 minutes (or 5-6 whistles) on medium flame.
14.Turn off the gas and wait until the pressure releases naturally. Once the pressure is released, open the lid and check if the meat is cooked through and tender.
15.Add the ghee and mix well. Cook for another 2-3 minutes on medium flame so that the ghee is evenly distributed.
16.Your Classic Mutton-Lamb Stew made like Bengali's is ready! Serve hot with rice or roti.
