Ingredients

1 cup all-purpose flour
3 tablespoons ghee or 3 tablespoons unsalted butter
1 pinch salt
1/2 liter oil ( for frying )
1 cup khoya or 1 cup reduced milk
1/2 cup sugar
3 almonds
3 raisins
1/2 teaspoon cardamom powder
1 tablespoon poppy seed
Gujiya or Perakiya is a popular sweet pastry in India, especially during festivals like Holi and Diwali. The filling is made with khoya or reduced milk, sugar, almonds, raisins, and cardamom powder. The filling is wrapped in a crispy pastry shell, which is then deep-fried until golden brown. It is served warm and dusted with powdered sugar. The taste is heavenly and leaves a sweet aftertaste. Instructions

1.In a large mixing bowl, mix all-purpose flour, a pinch of salt, and ghee/butter to form a crumbly texture.
2.Add water as needed to make a stiff dough.
3.Cover and let it rest for 30-40 minutes.
4.In a heavy-bottomed pan, heat khoya/reduced milk on medium heat until it changes color and becomes fragrant.
5.Add sugar, cardamom powder, chopped almonds, raisins, and poppy seeds.
6.Mix well and cook for 3-4 minutes until well combined.
7.Let the filling cool down.
8.Take the dough and divide it into small balls. Roll out each ball into a circle.
9.Spoon a small amount of filling onto one half of the circle.
10.Wet the edges of the circle with water, fold it over and press the edges to seal and create a half-moon shape.
11.Heat the oil in a deep pan and fry the prepared gujiyas until they turn golden brown.
12.Drain on a paper towel and serve warm.

CONS
