Ingredients

2 cups long grain rice ( basmati or other )
3 tablespoons cooking oil ( I prefer sunflower )
1/2 cup roasted peanuts ( optional )
1/2 teaspoon mustard seeds
1 pinch cayenne powder
1 pinch turmeric powder ( available at Indian groceries )
1 medium coconut ( just the scrapings )
2 fresh hot green peppers ( depending on how spicy )
1 piece fresh ginger
2 teaspoons cooking oil

Lemon Rice is a traditional south Indian dish that is commonly served as a breakfast or lunch item. The tangy and flavorful rice dish is a staple diet in most southern households and loved for its simplicity, and yet, packed with flavor. The dish is perfect as a quick snack or on-the-go meal as it can be consumed hot or cold. Coconut chutney is also a south Indian staple that is often paired with most rice dishes. Instructions

1.For the Lemon Rice:
2.Cook the rice according to package instructions and set aside to cool.
3.In a pan on medium heat, add 3 tbsp of cooking oil. When hot, add 1 tsp of mustard seeds until they pop. Add a pinch of cayenne powder and turmeric powder, and fried peanuts (optional). Mix well.
4.Add the cooled rice and mix until everything is well-coated with spices. Turn off the heat.
5.Squeeze the juice of 1 lemon over the rice, mix well, and let it sit for 10-15 minutes before serving.
6.For the Coconut Chutney:
7.Grind 1 cup of freshly grated coconut, 2 fresh hot green peppers, 1-inch piece of fresh ginger, and 2 tsp cooking oil in a food processor until it becomes a smooth paste.
8.In a pan on medium heat, add 1 tsp mustard seeds until they pop. Add the coconut paste to the pan and stir. Turn off the heat when the paste turns lightly golden and fragrant.
9.Add salt to taste and let it cool down.
10.Serve this refreshing coconut chutney with the lemon rice.
