Ingredients

1 cup basmati rice
3 tablespoons canola oil
2 teaspoons whole coriander seeds
3 chiles de arbol , crumbled by hand
1 1/2 tablespoons kosher salt
2 1/2 teaspoons ground saigon cinnamon
6 garlic cloves , finely chopped
4 skinless bone-in chicken thighs
4 skinless bone-in chicken legs
1 large yellow onion , chopped
2 inches piece ginger , roughly chopped
1 jalapeno , stemmed , seeded and finely chopped
1/4 cup toasted sliced almonds , for garnish
fried shallots , for garnish
cilantro leaf , for garnish

Instructions

1.Rinse the rice in cold water several times until the water runs clear.

3.While the rice is cooking, heat the canola oil in a large, oven-safe pot over medium-high heat.
4.Add the coriander seeds, chiles, salt, cinnamon, and garlic, stirring for one minute until fragrant.
5.Add the chicken pieces and stir for approximately 5-6 minutes until browned.
6.Add the onion, ginger, and jalapeno, stirring until slightly softened, about 5 minutes.
7.Preheat oven to 350°F.
8.Spread half the cooked rice into the pot, then lay the chicken mixture on top.
9.Add the remaining rice on top of the chicken, then pour 1/2 cup of water over the rice.
10.Cover the pot and bake on the middle rack of the oven for 30-35 minutes or until the chicken is fully cooked.
11.Serve the Biriyani onto plates, garnished with the almonds, fried shallots, and cilantro leaves.
