4 Cornish hens
1 tablespoon red food coloring
2 tablespoons yellow food coloring
marinade
1 1/2 cups homemade yogurt or 1 1/2 cups yogurt
1/2 cup extra virgin olive oil , plus additional for basting
1/4 cup lemon juice
3 tablespoons fresh ginger , grated
4 tablespoons ground cumin
1 tablespoon garlic , peeled and minced
1 tablespoon garam masala
2 teaspoons cayenne pepper
2 1/2 teaspoons kosher salt

Instructions

1.In a large bowl, whisk together the yogurt, olive oil and lemon juice.
2.Add ginger, cumin, garlic, garam masala, cayenne pepper, and salt to the bowl. Whisk until well combined.
3.Add the food colouring to the marinade and mix well.
4.Rinse the hens with cold water and pat them dry using paper towels.
5.Cut into each hen with a sharp knife in order to allow the marinade to penetrate the flesh.
6.Add the hens to the bowl of marinade. Cover and place in the fridge, marinating the hens for at least three hours, or overnight.
7.Preheat your oven to 375 F. Place the hens on a baking sheet, baste with additional olive oil and broil each side for 5 minutes or until lightly charred.
8.Reduce heat to 350 F and continue to bake for 30-40 minutes. Use extra baste for basting the hens while baking.
9.Remove hens from oven and let them rest for 5 minutes before serving.
