Ingredients

1 kg lamb ( a mix of chops , marrow bones with meat and medium pieces from the shoulder ) or 1 kg goat meat ( a mix of chops , marrow bones with meat and medium pieces from the shoulder )
2/3 cup oil
4 onions , finely sliced
1 teaspoon ginger paste
1 teaspoon garlic paste
1 teaspoon red chili powder
1 bunch fresh green coriander , choppped
1 small bunch green mint , chopped
4 green chilies , chopped
2 lemons , juice of
4 cardamoms
6 cloves
1/2 cinnamon stick
1 teaspoon caraway seed
1/2 teaspoon peppercorn
1/2 kg long-grain rice
1/2 cup milk
1 large pinch saffron
6 green cardamoms
8 cloves
2 bay leaves
1 cinnamon stick
2 tablespoons ghee
salt
Lamb (or Goat) Biryani is a popular and flavorful rice dish that has its roots in South Asia, particularly India and Pakistan. This dish is usually served at weddings and other special occasions as a main course. This biryani is made by cooking long-grain rice with tender lamb or goat meat that has been marinated with various spices and herbs, such as mint, cardamom, cinnamon, and cloves. The dish is cooked slowly, and the aromas of the spices infuse the rice and the meat, resulting in a flavorful, fragrant, and delicious biryani.

Instructions

1.Rinse the rice in a colander and soak it in water for half an hour.
2.Heat oil in a large casserole or deep pan, add onions and fry them until they become brown.
3.Add lamb or goat meat and fry until both sides are cooked.
4.Add ginger paste, garlic paste, red chili powder, fresh coriander, mint, green chilies, lemon juice, cardamoms, cloves, cinnamon stick, caraway seed, peppercorn and salt. Stir and cook for 10 minutes.
5.Add the soaked rice and stir well. Add enough water to cover the rice; it should be about one finger width above the rice. Add milk, saffron, green cardamoms, cloves, bay leaves, cinnamon stick, and ghee.
6.Bring the mixture to a boil, cover and reduce heat to very low. Cook until the rice is done, approximately 45-50 minutes.
7.Serve hot with raita, salad, and/or chutney.
