Ingredients

1 cup rice
2 cups water
2 medium onions , chopped
5 garlic cloves , halved
4 green chilies , halved
2 cloves
1/4 teaspoon turmeric powder
1 teaspoon salt
1/4 teaspoon mustard seeds
1/4 teaspoon cumin seed
1 cup chopped peas and carrots
2 tablespoons coriander leaves , chopped
Vegetable Khicadi is a popular dish from the state of Maharashtra in India. It is a one-pot meal made with rice and vegetables that is easy to make and is perfect for a quick lunch or dinner. The dish is commonly served with yogurt or pickle and is a staple in many households in India.

Instructions

1.Rinse the rice several times until the water runs clear, then soak for 30 minutes.
2.Heat oil in a pressure cooker, add mustard seeds and let them pop.
3.Add cumin seeds, cloves, chopped onions and green chilies, fry until onions turn translucent.
4.Add chopped vegetables, salt, turmeric and saute for 2-3 minutes.
5.Add soaked rice and 2 cups of water, mix well.
6.Close the lid of the pressure cooker, cook over medium heat for 3-4 whistles.
7.Switch off the heat, let the pressure release naturally.
8.Once the pressure is released, open the lid of the pressure cooker, stir the khicadi and transfer to a bowl.
9.Top with chopped coriander leaves and serve hot.
