Ingredients

2 cups basmati rice
2 cups vegetables ( red & yellow bellpeppers , potatoes , carrot , cauliflower , green beans , green peas )
1 teaspoon cumin seed
2 cardamoms
4 cloves
2 bay leaves
2 inches cinnamon sticks
ghee
1/2 cup onion
salt
2 cups spinach
1/4 cup coriander leaves
2 teaspoons ginger
1 teaspoon garlic
1 teaspoon coriander-cumin powder
6 green chilies
Spinach Vegetable Pulao is a popular Indian rice dish made with a combination of vegetables and spices that is healthy and flavorful. Instructions

1.Wash and soak the basmati rice for 30 minutes.
2.Heat ghee in a pan and add cumin seeds, cardamom, cloves, bay leaves, and cinnamon sticks. Fry for a few seconds till they sizzle.
3.Add chopped onion, ginger, garlic, and green chilies to the pan and fry till the onions turn translucent.
4.Now add the mixed vegetables and fry for 2-3 minutes till slightly tender.
5.Add salt, coriander-cumin powder and mix well.
6.Now add chopped spinach and stir well. Cover and cook for 2-3 minutes on medium flame.
7.Add soaked rice into the pan and stir well until all the rice grains are coated with spices.
8.Add chopped coriander leaves and 4 cups of water.
9.Cook the rice on low flame for 20-25 minutes or until the rice is tender.
10.Serve hot with raita or any curry of your choice.
