Ingredients

1 package basmati rice
1 tablespoon butter
1 1/2 tablespoons canola oil
1 kg chicken thigh fillet , cut into 3 cm pieces
1 onion , finely chopped
1 tablespoon finely grated fresh ginger
2 garlic cloves , crushed
2 teaspoons ground cumin
1 teaspoon ground cardamom
1 teaspoon coriander powder
1 teaspoon garam masala
1/4 teaspoon chili powder
1 1/4 cups tomatoes , puree
3 teaspoons cornflour
1/2 cup thickened cream
1/2 cup greek style natural yoghurt
50 g baby spinach leaves
salt , to taste
1/4 cup toasted sliced almonds , to serve

Instructions

1.Cook basmati rice according to package instructions.

7.In a small bowl, whisk cornflour with 2 tablespoons water. Pour the mixture into the pan and stir until well combined.
8.Add cream and yoghurt, stirring until smooth.
9.Add chicken and spinach leaves to the pan and stir until chicken is cooked through and spinach is wilted.
10.Season with salt and serve with basmati rice and toasted almond slices on top.
