Ingredients

2 spring onions , bulbs peeled and chopped
3 green chilies , chopped
1/2 medium cauliflower , cut into florets
1 medium carrot , scraped , sliced
5 -6 French beans , sliced
5 -6 mushrooms , sliced
1 medium red capsicum , diced
1/2 cup green peas
salt
1/4 teaspoon black pepper
1 tablespoon mustard paste
3 tablespoons tomato ketchup
1 tablespoon oil
1 tablespoon light cream
The vegetables in chilli mustard sauce is a very easy-to-make recipe that makes for a healthy and tasty side dish. This vegan-friendly dish is low in calories and packed with flavour. Instructions

1.Heat the oil in a pan and add the chopped spring onions and green chillies. Sauté for a minute.
2.Add the cauliflower, carrot, French beans, mushrooms, and red capsicum. Mix well. Add salt and black pepper. Cook on medium flame for 5-7 minutes.
3.Add the green peas and continue cooking for 2-3 minutes. You can add a little water if the vegetables are sticking to the pan.
4.Add mustard paste and tomato ketchup. Mix well and cook for a couple of minutes.
5.Add light cream and mix well. Cover the pan and let it cook for a minute.
6.Transfer to a serving dish and garnish with fresh coriander leaves.
