Ingredients

1 teaspoon ginger-garlic paste
2 green chilies , chopped
2 large potatoes , boiled and mashed
1/2 cup carrot , boiled and diced
salt
2 teaspoons lime juice
1 tablespoon fresh coriander leaves , chopped
4 red capsicums ( Simla Mirch )
2 cups gram flour
1/4 teaspoon red chili powder
3/4 cup boiled green peas
oil , to deep fry
Bhari Hui Simla Mirch Ka Pakora is a popular Indian snack dish made by stuffing red capsicums with a spicy filling and deep-frying them. The stuffing is made with boiled mashed potatoes, diced boiled carrots, and spices. The batter is made with gram flour, spices, and boiled green peas. Instructions

1.Wash and cut off the tops of the red capsicums (Simla Mirch). Remove the seeds and white membranes from inside the capsicums.
2.In a large bowl, mix together ginger-garlic paste, chopped green chilies, boiled mashed potatoes, boiled diced carrot, salt, lime juice, and chopped coriander leaves to form a filling. Stuff this filling inside the capsicums.
3.In another bowl, mix together gram flour, red chili powder, boiled green peas, and salt to form the batter.
4.Heat oil in a deep frying pan. Dip each stuffed capsicum into the batter until coated evenly. Slowly lower each capsicum into the hot oil and fry until golden brown. Drain excess oil on paper towels.
