Ingredients

1 1/2 lbs boneless chicken
1 1/2 cups uncooked basmati rice , soaked
1 teaspoon cayenne pepper ( to taste )
salt , to taste
2 tablespoons ginger paste
2 tablespoons garlic paste
4 tablespoons oil
1 teaspoon cumin seed
6 -8 cloves
6 -8 green cardamoms
2 bay leaves
2 inches cinnamon sticks
2 medium onions , sliced
3 medium tomatoes , chopped
1/2 cup yogurt
3 cups chicken stock
fresh cilantro , a few sprigs
Murgh Pulao is a classic Indian chicken and rice dish that has been beloved for generations. The dish originated in the Mughal era and is now a staple in Indian homes and restaurants alike. Instructions

1.Rinse and soak the basmati rice in water for at least 30 minutes.
2.In a pan, heat oil and add cumin seeds, cloves, cardamom, bay leaves, and cinnamon sticks.
3.Add sliced onions and sauté till golden brown.
4.Add ginger and garlic paste and sauté for a minute.
5.Now add chopped tomatoes, salt, cayenne pepper and cook till the tomatoes are mushy.
6.Add boneless chicken and cook until it changes color.
7.Add yogurt and give everything a good mix.
8.Transfer the rice to the same vessel, add chicken stock and mix everything well.
9.Cover the pot and let the pulao cook for 20 minutes on low heat.
10.After 20 minutes, switch off the heat and let the pulao rest for another 10 minutes before serving. Garnish with cilantro before serving.
