Ingredients

1 lb ground beef
1 slice white bread
1/4 cup milk
1 egg
1 envelope of liptons onion & mushroom soup mix
1 teaspoon cumin
1 teaspoon garam masala
1 teaspoon garlic powder
1 teaspoon onion powder
3 small potatoes , peeled and chopped into 1-inch cubes
3/4 cup corn , frozen ( I used a fire roasted )
3/4 cup carrot , frozen
3/4 cup green beans , frozen
3/4 cup cauliflower floret , frozen
1/4 cup olive oil
1 teaspoon curry powder
2 tablespoons onion flakes
2 tablespoons garlic flakes
salt

Instructions

1.Preheat the oven at 410°F (210°C).
2.In a large bowl, soak the slice of bread in milk.
3.Add the ground beef, egg, onion & mushroom soup mix, cumin, garam masala, garlic powder and onion powder to the bowl.
4.Mix well to combine all ingredients and form small meatballs.
5.Place the meatballs in a roasting dish.
6.Add the chopped potatoes, corn, carrots, green beans and cauliflower florets to the roasting dish.
7.Drizzle with olive oil, curry powder, onion flakes, garlic flakes and salt.
8.Mix everything together well.
9.Bake in the oven for 35-40 minutes or until the meatballs are cooked through and well browned.
