1 tablespoon curry powder
1 pinch mustard seeds

2 carrots , chopped
2 celery ribs , chopped
2 garlic cloves , minced
1 big russet potato , peeled and diced
1 lb yellow beet , peeled and diced
3 cups vegetable broth
13 1/2 ounces coconut milk
1/3 cup orange juice
salt and pepper

Instructions

1.In a mixing bowl, combine curry powder, mustard seeds, and cumin seed. Mix well.
2.In a soup pot, heat vegetable oil over medium heat and add the onion. Saute the onion until it becomes translucent.
3.Add the carrots and celery ribs and saute until the vegetables are soft.
4.Add the minced garlic and the mixed curry powder, cumin seed, and mustard seed. Stir the mixture well for a minute.
5.Add the peeled and diced potato and yellow beet into the pot and stir well.
6.Pour the vegetable broth and coconut milk into the pot and bring it to a boil.
7.Reduce the heat to low and let the soup simmer for 20-25 minutes until all the vegetables are fully cooked.
8.Pour orange juice into the pot and stir well. Remove the pot from the heat. Let the soup cool.
9.Add salt and pepper to taste and blend with an immersion blender. If you don't have an immersion blender, you can use a blender and blend in small batches.
10.Reheat the soup before serving.
