Ingredients

6 garlic cloves , peeled
3 inches fresh ginger , peeled
2 -3 red chilies , deseeded
olive oil
1 tablespoon mustard seeds
1 tablespoon paprika
2 teaspoons ground cumin
2 teaspoons ground coriander
3 tablespoons garam masala , divided
3/4 cup plain yogurt ( you can heap it )
4 medium chicken breasts , skinless and boneless , cut into large chunks
1 tablespoon butter
2 medium onions , peeled and finely sliced
2 tablespoons tomato puree
1 small handful of ground cashew nuts or 1 small almonds
sea salt
1/2 cup heavy cream
handful fresh cilantro , chopped
1 -2 lime , juice of

Instructions

1.Blend the garlic, ginger, chilies, and olive oil into a smooth paste.

3.Add the garlic paste to the pan and cook for a minute.

6.Meanwhile, heat another pan and add the butter. Once melted, add the onions and cook until soft and caramelized.
7.Add the tomato puree, cashew nuts or almonds, remaining tablespoon of garam masala, and a pinch of salt to the onions. Cook for 2-3 minutes or until the ingredients have combined.
8.Add the onion mixture to the chicken along with the heavy cream. Cook for a further 5 minutes or until the sauce has thickened.
9.Garnish with chopped cilantro and a squeeze of lime juice before serving.
