Ingredients

4 baby eggplants ( Asian or Italian ) or 2 large eggplants ( globe variety )
3/4 cup ghee or 3/4 cup vegetable oil
1 teaspoon cumin seed
1 red onion , finely chopped
1 piece fresh ginger , peeled chopped
1 teaspoon paprika
salt , to taste
2 tomatoes , chopped
3 fresh green chili peppers , minced
4 tablespoons fresh cilantro , chopped
Indian Fire Roasted Eggplant is an appetizing and healthy vegetarian dish, popular in the Indian subcontinent, Middle East and Mediterranean regions. Instructions

1.Preheat the grill and put eggplants on it. Cover the lid and grill for 15 minutes till it’s roasted.
2.Take them off the grill and let them cool down. Peel skin off and chop them in medium size pieces.
3.In a saucepan, heat ghee or vegetable oil on medium heat. Add cumin seeds and let them sputter.
4.Add onions, ginger and paprika. Stir till onions are translucent.
5.Add chopped eggplant, salt and tomatoes. Mix everything and let it cook for a minute or two.
6.Add minced green chili peppers and cilantro to give a spicy flavor.
7.Serve hot with naan bread, rice or simply as a side dish.
