Ingredients

3 lbs broiler-fryer chickens
1 1/2 tablespoons kosher salt
4 teaspoons ground cumin , divided
1 1/2 teaspoons ground cardamom , divided
1 teaspoon cayenne pepper
2 1/2 cups raisins ( about 12 ounces )
1 1/2 cups water
4 cups plain yogurt
2 teaspoons fresh ground black pepper
2 teaspoons ground cinnamon
5 tablespoons clarified butter
1 cup raw cashews ( about 5 ounces )
10 whole cloves
1/3 - 1/2 cup fresh lemon juice

Instructions

1.Preheat the oven to 350 degrees F.
2.Rinse the chicken inside and out, and pat dry with paper towels.

4.Rub the spice mixture all over the chicken and let it sit for 30 minutes.

8.Add the yogurt mixture to the pot, cover, and transfer to the oven.
9.Bake for 1 1/2 hours, or until the chicken is cooked through and tender.
10.In a small pan, toast the cashews with the cloves until they are golden brown.
11.Add the cashews and cloves to the pot, along with the lemon juice, and season to taste with salt.
12.Serve hot, with rice or pita bread.
