Ingredients

450 g chicken , boned and cut into large cubes
1/2 orange , zest of
1 orange , juice of ( reserving 2 tbsps . for dressing )
150 g ready soaked dried apricots , cut into quarters
1 teaspoon clear honey
1 tablespoon soy sauce
1 tablespoon ginger , freshly grated
50 g bean sprouts
125 g button mushrooms , washed and sliced
4 shallots , finely chopped
25 g sliced almonds ( optional )
iceberg lettuce , finely shredded
1 tablespoon fresh coriander leaves , chopped ( to garnish )
3 tablespoons olive oil
2 tablespoons reserved orange juice
1 clove garlic , peeled and crushed
1 pinch Chinese five spice powder
1/2 teaspoon caster sugar
1 teaspoon ground mustard
This warm chicken-apricot salad is a perfect dish for lunch or dinner. It is easy to make, filling, and bursting with flavors! Instructions

1.Preheat a frying pan or wok over medium heat.
2.Add olive oil and cook chicken cubes for 10-12 minutes until golden brown. Add garlic, ginger, Chinese five spice and caster sugar.
3.Add orange zest and orange juice to the pan, along with soy sauce and honey. Mix well.
4.Add apricots, mushrooms, and shallots. Cook for 5 minutes until the vegetables are soft.
5.Add bean sprouts and mix well. Turn off the heat.
6.Arrange shredded iceberg lettuce on a plate and pour the warm chicken-apricot dish on top.
7.Sprinkle sliced almonds and coriander leaves over the dish.
8.Serve warm and enjoy!
