Ingredients

500 g halibut fillets
2 teaspoons garlic paste
2 teaspoons ginger paste
1 shallot
2 tablespoons canola oil
1 teaspoon chili powder
1 teaspoon turmeric
1 teaspoon garam masala
1/2 teaspoon ground fenugreek
1 can coconut milk

15 curry leaves
1 teaspoon cornflour

Instructions

1.Cut the halibut fillets into small cubes and set aside.
2.Heat the canola oil in a large pan over medium heat.

4.Add the garlic and ginger paste and sauté for another 2 minutes.
5.Add the chili powder, turmeric, garam masala, and ground fenugreek and cook for 1 minute until fragrant.
6.Add the halibut cubes to the pan and sauté for 2-3 minutes or until lightly browned on all sides.
7.Pour in the can of coconut milk and stir to combine.
8.Reduce heat to low and allow to simmer for 5-10 minutes until the fish is fully cooked.
9.Mix the cornflour with a little bit of water and stir into the curry to thicken the sauce.
10.Season with salt and pepper to taste before serving.
