Ingredients

2 eggs
3 cups skim milk
1/4 teaspoon salt
1 teaspoon melted butter
2 cups all-purpose flour
2 tablespoons butter

1 onion , finely diced
1 cup chicken broth
1 pound zucchini blossoms , rinsed and chopped
1 large tomato , seeded and diced
1 pinch ground nutmeg , or to taste ( optional )
1 tablespoon chopped fresh epazote leaves ( optional )
1 container creme fraiche
salt and black pepper to taste
2 cups half-and-half cream
1 cup grated Manchego cheese

Instructions

1.In a blender, mix together eggs, milk, salt and melted butter until smooth. Add flour and pulse until fully incorporated.
2.Cover and refrigerate batter for at least 1 hour.
3.In a large skillet over medium heat, melt butter and sauté garlic and onion until softened, about 5 minutes.
4.Add chicken broth, zucchini blossoms, tomato, and nutmeg. Cook for 10 minutes until zucchini is tender. Stir in epazote and crème fraiche. Season with salt and pepper.
5.Heat a crepe pan over medium heat. Lightly grease with cooking spray. Pour 1/4 cup batter into pan and swirl to evenly coat bottom of pan. Cook for 1-2 minutes or until set. Using a spatula, flip crepe and cook for 30 seconds longer. Repeat with remaining batter.
6.Divide filling evenly among crepes. Roll up and place seam down in a greased 9x13 inch baking dish. Pour half and half over crepes and sprinkle with Manchego cheese.
7.Bake at 350°F for 25 minutes or until golden brown.
